Homemade Cheese-its

4 oz chedder cheese, grated

2 Tbsp parmesan or pecorino cheese, grated

3/4 cup whole wheat pastry flour

4 Tbsp butter

1/2 tsp salt

1/2 tsp mustard

1/2 tsp pepper

pinch paprika

pinch red pepper

2 Tbsp yogurt

Place all except yogurt into a food processor, pulse until crumbly. Add yogurt and pulse until dough holds together.

Remove from food processor, divide into 2 sections. Wrap each in plastic wrap and chill for at least 20 minutes (up to 2 days).

Preheat oven to 350 degrees F. On floured surface, roll out dough to 1/4 inch thick. Cut desired shapes, place 1 inch apart on parchment paper on baking sheets. Bake for 10 minutes. Remove and cool on racks. Store in airtight containers or freeze until ready to use.

3/4 cup crushed cheese flavored corn puffs

1/3 cup sugar

1/2 tsp cinnamon

1 can (8 oz) refrigerated buttermilk or country style biscuits

3 Tbsp butter or margarine, melted

2 cups (1 lb 5 oz can) prepared apple pie filling

In a small bowl, combine corn puffs, sugar, and cinnamon, Mix well. Reserve 1/3 cup for topping. Separate biscuit dough into 10 biscuits. Dip each in butter, coating both sides well. Coat both sides with crumb mixture. Place each in ungreased deep muffin cup, pressing dough up sides and slightly over edge of cup. Fill each with about 2 tablespoons pie filling. Sprinkle with 1/3 cup crumb mixture. Bake at 375 degrees F for 25-30 minutes until crust is golden brown. Yield: 8-10 servings

8 ounces grated sharp cheddar cheese

2 cups flour

1 cup melted butter or margarine

2 cups fresh crisp rice cereal

1/2 tsp salt

1/4 tsp cayenne pepper

1/2 tsp dried mustard

1 dash Worcestershire sauce

Mix all ingredients well with hands.  Roll into balls the size of walnuts.  Place on an ungreased cookie sheet and press with tines of a fork in a criss-cross pattern to flatten slightly.  Bake at 350-degrees for 12-15 minutes or until lightly browned.  Cool on cake rack, serve at room temperature.

1 cup Flour

1/2 tsp Salt

1/2 tsp Sweet Paprika

pinch of Cayenne Pepper

6 T Butter, cut into pieces

3/4 cup grated Cheddar Cheese

2 T Parmesan Cheese

1/4 cup Beer or Water

3/4 cup Poppy or Caraway Seeds

Combine flour, salt, paprika, cayenne & cheese. Add butter, mix well. Add beer & blend to an oatmeal consistency.  Shape into a 1″ roll.  Wrap and freeze 1 hour.  Slice into 1/8″ thick slices.  Sprinkle with seeds.  Bake at 450 degrees for 12 minutes.

Makes 3 dozen
